From our pure, wild honey we create a gently sparkling honeywater. This cuvee is made from a 3 year aged honey, never before opened and sourced from Big Scrub, Bundjalung. Fermentation starts and finishes naturally in bottle, using only natural yeasts from the hive. Enjoy daily as a tonic or anytime a little energy is required.
Our sweet variety is similar to a Trójniak which translates to "three parts" and refers to a category of Polish mead made with a honey to water ratio of approximately 1:2. A Trójniak will greatly reward cellaring.
